I have updated Phabricator to the latest build a few days ago and noticed when viewing the workboard for one of our projects that there is now a Milestone and Sub-Projects option but i am not sure how to use these.
How do we create project milestones?

These are prototypes, and you are seeing them only because you have prototypes enabled. See User Guide: Prototype Applications. See T3670 / T10010.
