Is there any reason to stop the author from editing the choices?

We have no current plans to improve Slowvote. In particular allowing editing after votes have been cast seems to be ripe with potential social issues (changing the text, adding new items someone would have wanted). Seems more correct to just close that vote and start over.
Yeah -- see also T5775. This is slightly less rife with issues than adding new options is, but still lets the author change the meaning of the results.
We might implement more casual poll types eventually or support for stuff like this, but Slowvote is very low on the priority list for anything other than infrastructure modernization.

Specifically, the reason to stop the author from editing the choices is to prevent them from changing this poll:
- How cool am I?
- Super Cool
- Not That Cool
...into this poll:
- How cool am I?
- Not That Cool
- SOOO COOOL
...after a bunch of people have already voted for option (2).
I just created a poll where I accidentally hit enter while editing options, so I was left with an incomplete poll which I wasn't allowed to complete, so I had to close it. Would you consider adding a feature that allows us to edit poll options as long as there are no votes cast yet?
